America Test Kitchen recently published this timely tip for quick and really easy corn on the cob: cut the inch off the bottom of an ear, nuke it for 2-3 minutes, then just shake (or more like squeeze) the ear out of the husk silk-free.
Well, it’s not exactly Modernist Cuisine, but I tried it yesterday and it worked so amazingly well I thought I’d share!
I’m going to experiment to see whether steaming works the same way … I’ve got no concerns about the microwave, but it’d be easier to steam lots of ears when cooking for a crowd.
