This item from Saveur’s Facebook feed made me laugh … it’s a brief blurb on how to dehydrate grapefruit. According to Saveur, dehydrating grapefruit gives the segments “a pleasantly chewy texture and concentrates their sweetness.” Hmmm, sweetness? Grapefruit?
I’m sure it has nothing to do with the 1/2 cup of confectioners’ sugar that’s dusted on!
Anyways, that said, the recipe they link to for risotto with grapefruit and seared scallops looks fab.
